Loaded Burrito Bowl with Lingcod

We asked our Newport Village neighbour Marnie from Inlet Seafoods to share one of her favourite dishes.

She came back with a loaded Burrito Bowl with Lingcod topped with sweet and spicy Pineapple Habanero Hot Sauce. Yum!

Loaded Burrito Bowl with Lingcod

Makes 2 servings

I started with 300 grams of lingcod from the shop. Once I got it home, I seasoned it using Chef Paul Prudehomme’s Blackened Redfish Magic seasoning. 

I got the pan nice and hot then used some of Olive The Best’s Garlic Olive Oil (also at Newport Village!) before tossing in the cod. 

After a minute or so I used a spatula to start mashing up the fish in the pan - though you’re totally welcome just to fry small pieces. I find sometimes the mashed cod is easier to fit into a loaded bowl, but that’s just me!

Sauté the cod for another 4-5 mins until cooked. Season again if desired.

In a separate pan (sometimes I find a wok even easier, depending on the quantity being made), I added more garlic olive oil (approx. 2 tbsp).

Then I added a can of strained black beans, as well as half a can of strained corn. After a minute or so, stirring frequently, I added some shallots. I sautéed these ingredients quickly, lightly seasoning with salt and pepper.

Lastly, I added my three cups of cooked brown rice. When you do this, ideally you’ll hear the pan start to crackle and sizzle once the rice is added, but be careful not to over fry. Essentially you want to heat the rice without drying it out.

In the base of the bowl I always like to do half of the Mexican rice, then half shredded Romaine lettuce - dividing the rice and the romaine with your cod. After that, I garnish with guacamole, pico de gallo, and crema, finishing with a little bit of cilantro to taste. Top with avocado slices and drizzle Pineapple Habanero Hot Sauce on top.
