This semi-wild, cracked star anise grows in the Northeastern region of Vietnam. Extremely rich in flavour, it should be used sparingly, great in savory dishes as well as desserts.
Even though it contains essential oils that are similar to those found in anise seeds, star anise, or badian is more intense. Its sweet, licorice flavour is more pronounced which is why using it with discretion is recommended. In Vietnamese and Chinese cuisine, it flavours both braised meat dishes and broths. It is also found in Chinese Five Spices. Pairs especially well with pork, beef and duck. With a touch of mandarin peel and fennel, it is a perfect match for roasts or spare ribs.
